I have to admit that I do love an occasional pancake.  Gluten-free, of course.  Made with ghee, of course.  Incredibly light on the syrup, of course.  While I eliminated many of the negatives, I have to admit that my prior pancake approach still wasn't "health-supporting".  Well, I did top the pancakes with Mary Ruth's Almond Butter and Jelly Liposomal which has DHA and MCTs.

All that said, I have found a new favorite way to make pancakes.  I had learned about Himalayan Tartary Buckwheat a year or so ago when a capsule-based product emerged.  Then, recently, Himalayan Tartary Buckwheat Super Nutrition Flour was introduced.  It is organic, non-GMO, grain free, and gluten free.

According to the website, Himalayan Tartary Buckwheat:

  • Is packed with rutin
  • Is loaded with protective phytonutrients
  • Is a balanced plant protein
  • Contains 2-HOBA which has been found to have positive effects on the immune system
  • Is loaded with magnesium, zinc, and B vitamins
  • Is rich in D-chiro-inositol which is involved in blood sugar regulation and hormone balance
  • Is high in healthy, prebiotic fiber

Wait, what?  I can eat pancakes and get all those benefits at the same time?  I feel like I've really upped my pancake game now!

I followed Mark's (Hyman) Himalayan Tartary Buckwheat Pancakes recipe.  It does take a bit more work than using a prepared pancake mix.  I had to get several spices, but I love that these have a lot of health-supporting spices and still taste GREAT.  The only thing I did differently was I used ghee instead of coconut oil.

Then, once they were cooked, I added a small amount of Kerrygold Grass-Fed Pure Irish Butter and lightly drizzled Coombs Family Farms Maple Stream Sprayable Organic Maple Syrup on them.

These are so different from the pancakes I'm used to.  I'll admit the first couple bites where a "getting to know you", and then I fell in love.  While this was the first time I have made these, it will certainly not be the last.
